Kroket (croquette) is quite famous as finger food in Indonesia. The smooth texture of the potato, the tasty vegetable and chicken/beef ragout, combined with the crunchiness of the bread crumbs make kroket a good companion for tea or coffee in the afternoon.
Kroket usually comes either in oval or round shape. The round ones are about the size of a meatball. For kids, I like to make the round and a tad smaller version. I made some to a few play dates my daughter went to, and the kids just loved them for lunch! (as well as their mums).
Finding the right kind of potato for kroket base is quite tricky. It needs to be low in water content to avoid the kroket explodes when fried. I found Nadine the best, but you can use other medium-size potatoes. You might want to fry them after steaming to make sure they're dry enough.
